Our extra virgin olive oil is crafted in the green heart of Umbria. Here at the Terre di Todi estate, olive groves flourish on rolling hillsides, steeped in generations of agricultural tradition. We cultivate and process the olives with a single aim: to capture, in every drop, the soul of our land.
We produce four distinctive oil ranges – each with a unique blend of cultivars but united by a common philosophy: respect for nature, uncompromising quality and a distinctive character.
Made from Leccino, Frantoio, Moraiolo and Pendolino olives grown at about 450 metres above sea level, this elegant blend perfectly captures the balance of our local terroir.
It has a light fruitiness with fresh aromas of almond and artichoke, and delicate balsamic notes. On the palate it is smooth, with a gentle bitterness and spicy notes.
Versatile and refined, it is ideal drizzled over fish, white meats, vegetables, salads, pulses and other delicate dishes.
This classic oil embodies the authentic Terre di Todi style, offering a perfect balance of intensity and finesse.
It is characterised by a medium-to-intense fruity aroma of green olive with vegetal hints of artichoke, fresh grass and light notes of almond. On the palate it is harmonious, with distinct yet elegant bitter and spicy (or peppery) notes, and a clean, lingering finish.
Ideal for high-quality everyday use, it shines on bruschetta, soups, vegetables, pasta, white meats and other Mediterranean dishes.
An authentic and intense expression of the Moraiolo cultivar, emblematic of Umbria. Harvested early to preserve its structure and polyphenolic richness, it bursts with an intense green-olive aroma featuring notes of cut grass, artichoke, tomato leaf and fresh almond. On the palate it is bold and robust, with a pronounced bitterness and a vibrant, long-lasting pungency.
Ideal for substantial, flavourful dishes – red meats, pulses, bitter vegetables, traditional bruschetta and mature cheeses. It also provides an intriguing contrast in richer, sweet preparations like chickpea or pumpkin purée, asparagus or tomato velouté.
Produced from our certified organic olive groves, this balanced blend combines Frantoio, Nostrale di Rigali, Moraiolo and Pendolino.
It has a medium-intense fruitiness with green notes of tomato, leaf and artichoke, enriched by elegant hints of almond. On the palate it is harmonious, with well-integrated bitterness and gentle peppery heat leading to a fresh, vegetal finish.
